Some sport fish caught in the nation’s lakes, rivers, oceans, and estuaries, however, may contain chemicals that could pose health risks if these fish are eaten in large amounts. The purpose of this brochure is not to discourage you from eating fish, but to provide you with information to help you make an informed decision about what to eat and when.
Some of these chemicals, such as nitrates and nitrites, can be harmful to humans and other animals. Other chemicals are used to improve the quality of a fish’s life. For example, nitrate is used as a fertiliser in some fish farms. Nitrite is a chemical that is added to fish feed to make it more nutritious.
These chemicals can also be toxic to people and animals if they are ingested or inhaled. Many of them have not yet been identified and are not listed on this website. However, you can find out more about these substances by visiting the Environmental Protection Agency’s website at www.epa.

Some fish are not suitable to be eaten raw, and catfish is one of them. If the water has been polluted by human activity, wild-caught fish can be a risk for parasites. In addition to the risk of parasite contamination, raw fish is also a source of mercury. Mercury is a neurotoxin that can damage the central nervous system and cause neurological disorders such as Alzheimer’s and Parkinson’s disease.
In the United States, mercury levels in fish can be as high as 1,000 parts per billion (ppb) in some species, which is more than twice the level considered safe by the U.S. Food and Drug Administration (FDA). Mercury can also accumulate in the body over time, making it more difficult for fish to absorb nutrients from the food they eat.

PCBs and chlordane Polychlorinated biphenyls and chlordane are found in the flesh and eggs of the shovelnose sturgeon in the Missouri and Mississippi rivers. The MDHSS study found that the levels of PCBs, DDT, dieldrin, and PCB-like compounds in fish and shellfish from the Mississippi and Missouri rivers were significantly higher than those found in other fish species.
The study also found high concentrations of dioxins and other contaminants in some fish from both rivers. These contaminants are known to cause cancer and reproductive problems in humans. Dioxin is a known carcinogen and has been linked to a number of health problems, including liver and kidney damage, birth defects, reproductive and developmental disorders, as well as immune system and neurological problems.
