The small piece of meat that a crawfish produces is located in its tail. When you’re at a crawfish boil or eating a pile of mudbugs at a restaurant, many people just pinch off the tail, squeeze out the meat, and eat it with a spoon.

But a new study published in the journal Proceedings of the National Academy of Sciences suggests that this is not the best way to eat the tiny crustacean.

In fact, the researchers found that it’s actually much better to use a knife and fork to cut through the tough outer shell of a lobster’s shell, which is what most people do when they’re trying to make a meal out of it.
