As in all forms of frying, too high a temperature of the oil and the coating will start to burn; not hot enough and the coating/food starts to absorb the oil. In my kitchen test, the corn meal and flour came out perfect, but the cornmeal was more uniformly brown than the flour.
In the end, I think it’s a matter of personal preference. If you want a crispy, golden-brown coating on your cornbread, go for it. But if you’re looking for something a little more rustic, you can use a combination of both.
