Our secret to extra crispy pan-fried catfish? Bread the fillets with grits instead of cornmeal. In the shallow dish, whisk together the eggs and flour. Dip each fillet into the egg mixture, then dredge in bread crumbs. Repeat until all the breadcrumbs have been used.

Heat oil in a large skillet over medium-high heat. When oil is hot but not smoking, add the fish and cook, turning occasionally, until golden brown and cooked through, about 5 minutes. Transfer to a plate and set aside.

What fish is best with grits?

For my fish and grits, I went with southern fried (and Cajun flavored) fresh Orange Roughy fish. Other white flaky fish alternatives that would work well include cod, trout, bass, grouper, and red snapper. All of them are great for this recipe. I also made a few changes to the recipe to make it more palatable for vegetarians and vegans.

I omitted the cream of mushroom soup and substituted it with a vegetable broth. This is a great way to use up leftovers from a weeknight dinner. If you don’t have a veggie broth, you can use chicken broth instead.

You can also use a combination of broth and water, but I didn’t find it to be as flavorful as I would have liked. The recipe calls for 1 1/2 cups of chicken stock and 1 cup of vegetable stock, so you could use either of those if you prefer.

Each piece of fish needs to be cut in half.

Is it better to fry fish in cornmeal or flour?

As in all forms of frying, too high a temperature of the oil and the coating will start to burn; not hot enough and the coating/food starts to absorb the oil. In my kitchen test, the corn meal and flour came out perfect, but the cornmeal was more uniformly golden than the flour.

In the end, it’s a matter of personal preference. If you want a crispy, golden coating on your cornbread, go for it. But if you’re looking for something a little more delicate, you can always use cornstarch instead.
