TREVALLY has meat that is dense and oily. They can be dry if overcooked, but Grilled, BBQ’d or Pan Fried lightly they are a pleasant eating fish. The skin is removed from the dark meat and cut into thin strips. The fish is often served with a side of rice and vegetables. The fish can also be served as a main dish, or as an accompaniment to other dishes.

Can you eat big eye trevally?
Trevallies have superb eating qualities, with a strong but not overpowering flavour. They are an excellent choice for children as their bones are easily removed. They are a good source of calcium, iron, zinc, copper, manganese, selenium and vitamins A, C, D, E, K and B12.

How do you cook trevally?
Take a small amount of olive oil and put it in a pan. The trevally fillets should be added to the oil when it is hot. Cook for 3 to 5 minutes, flipping once during cooking, or until the fillets are easy to pick up with a fork. Remove the trevally and serve it with fresh lemon wedges or herbed horseradish.
